Vanilla & Honey Ice Cream
Summer is making it's presence felt over the last few days. Today it reached 40C in our backyard. So out came the ice cream maker.
There is usually some form of frozen deliciousness in the freezer throughout the year, usually just a super basic mix of 1/2 milk 1/2 cream, some sugar and vanilla essence. But for a more decedent dessert I bust out the eggs and honey.
Vanilla & Honey Ice Cream
3 eggs, separated
1/2 C honey
4 C cream
1 vanilla bean or 1 tsp of vanilla extract.
Beat egg yolks till pale and smooth. Add honey and beat till combined.
In a separate bowl, beat egg whites till stiff.
Fold egg white mixture into yolks.
Gently stir in cream and pour into a saucepan.
Cook over a low to medium heat, stirring constantly, for 15 minutes or till thick.
Take of heat and stir in vanilla.
Allow to cool completely before churning.
Churn ice cream maker until it looks like thick soft serve ice cream.
Eat then and there or keep it in the freezer.
Enjoy!

I have a Cuisinart ice cream maker, it's a little noisy but super easy to use.
